Blood Orange Yogurt Cake

I'm slowly getting into cooking and back to baking. 


Ingredients

1.5 cups all-purpose flour

2 tsp baking powder

1/4 tsp salt

1 cup plain greek yogurt

3/4 cup sugar

3 large eggs

2 blood orange zested

1/4 cup blood orange juice (freshly squeezed preferred)

1 tsp vanilla extract

1/2 cup coconut oil, melted


Blood Orange Icing

1 blood orange, zested

1.5 cups powdered sugar

2 tbsp blood orange juice (freshly squeezed preferred)


Instructions

Preheat oven to 350F and spray a 9x5 loaf pan, generously

In a small bowl, whisk up the flour, baking powder and salt. 

In a large bowl, mix the yogurt and sugar until combined. Whisk in the eggs, orange zest, juice and vanilla. 

Mix in the dry ingredients into the wet ingredients, until fully combined. Use a spatula to fold the coconut oil into the batter. Lightly stir until the oil is completely mixed in. Then pour the batter into the greased pan and bake for 50 minutes, or the center is set and a toothpick comes out clean (that's how I leaned from my late grandmother).

Let the cake cool for 10 minutes (trust me on this), then remove from the pan and place on a cooling rack (looks like the rack you see on grills). 

Once it's totally cooled down, pour the icing over the top, and let the icing set for 20 minutes. 

I've learned over the years (also, trial and error), DO NOT put icing on a hot cake. This will melt the cake and mess it all up.
