2 Ingredient Dessert For Summer

During summer (okay, really any season), the idea of sweet treat o'clock is a perfect way to cap off dinner. There really isn't anything better than to cap off dinner with ordering a dessert to end off the beautiful evening. When it comes to the summer months though, ordering molten lava cake or hot chocolate chip cookie with ice cream isn't the first thing that looks captivating. Something still sweet, but cool and refreshing, while still enjoying the satisfaction of dessert. 

Just learning about this shaved sumo orange delight. 

My 3 yo and I love those mandarin oranges. It's the simple manner of being able to easily peel apart an orange and not have this mess or ugly thing missing a few slices afterwards. 

Before forgetting, a lovely thank you to my mother, who has always been desserts should never be loaded up on empty calories or buckets full of sugar. Sweet enough to combat the sweet tooth, and gentle on the insides and love handles. 


Ingredients

Sumo Orange
Plain Greek Yogurt (with a 1/2 tsp of vanilla extract)
Chocolate Drizzle (the kind that hardens over ice cream, just don't over do it)

Make It

Grab a frozen orange (yes, they should have been placed in the freezer overnight)
Add yogurt to your cup
Zest your frozed, unpeeled orange over the yogurt
Add vanilla, fruit, sprinkles, nuts. Whatever youi fancy


Tips For Making This Dessert With A Little Extra
  • Peel your oranges. Ya, I have tried just tossing the whole orange in the freezer, it defeats the purpose and you end up with very cold fingers. Peel your oranges and place in an airtight container or wrap in freezer wrap for frozen oranges or whatever fruit you like, ready at a moments notice.
  • Add vanilla to your yogurt. Yes you can buy vanilla yogurt, but most dairy free yogurt options I’ve tried tend to taste a bit artificial with the vanilla. Adding a splash of vanilla or sprinkle of powdered vanilla really adds some depth and warmth to this recipe that makes it feel more indulgent.
  • Go crazy with the toppings. Chopped roasted nuts, granola, fresh fruit, you can really use anything you like here. I like ingredients that add a bit of crunch for more texture, but use what you have on hand!
